Yeah I think what I dislike about that is it breaks up the flow of whatever I am writing.

No, It doesn't have to.

You can just write it out straight, without formatting, and then after you're done that go back and add the asterisks to emphasize the parts that you want to emphasize, already having your thoughts jotted down.
