I wish they would just show you the actual charge rate like electric cars do. Eg "20w" for 20 watts
Me too, I paid for a couple of apps with more charging info like Ampere and GSam Battery Monitor
I think most custom ROMs do this. Sad it's not an option on stock.

Ideally it would just show us the nominal charging rate, as negotiated via the USB power delivery protocol. The OS has this information, but last I checked it was impossible to directly access from userspace. Apps like AccuBattery just monitor the battery usage over time to estimate it.

However, I think its the power of the battery being charged and not the power that is going through the cables.
