Overall, liftoff has a pretty decent amount of customization. Posts can be full cards, compact, or compact without thumbnails. A full width image is shown if the post is expanded.
Font size for the header, title, and body are separately adjustable. The 'action bar' (share, reply, vote, etc) does not appear to be resizable.
I was unable to find a way to browse a list of subscribed communities, which I generally find useful.
This definitely seems like a good start, I'll definitely be following development.
For the record, Liftoff does actually have the communities on the bottom menu bar. I think i was confused because this is hidden when browsing a specific community. If one hits the back button / gesture, the menu appears again.
That feature would be very nice if you had little data.

Thanks for the update, but I'm not seeing the option anywhere? There is thumbnail left or right but I didn't see an option to hide.
