Well put together video! My verdict is that it was the bakery owner. He was already a known creep, inviting his pretty employees to dinner. No former employees had heard of this so-called "mandatory coffee course." The 2nd call, where within minutes she went from a busy street to seemingly indoors, means that she was probably lured to someplace in the bakery's vicinity. The bakery owner claimed to not remember what he was doing between the hours of her disappearance. The "even if I did it, what would be the goal?" line aka 'If I Did It' is manipulative and suspect. Like I think we can all figure out the goal of kidnapping a pretty girl.
