Not at all sure my stock kb is doing me any privacy favors.

i use Thumb-key,
its very strict about privacy,
and all about swiping inputs.
but its a rather radical concept.

i used hacker's keyboard a lot,
but i never used swiping before Thumb-key,
so i dont know how well it supports swiping.

I also used Gboard a lot, because i really like the clipboard functionality,
but thats obviously what you are trying to get away from.

Thumb-key looks interesting. How steep do you think the learning curve is?

id say it took at least a week of concious effort to not switch back.
after that it was still patchy but usable for a few weeks.

now i mostly got it down, and imo my biggest gripe now is the lack of a dictionary/spellcheck.

keep in mind that i dont chat much,
so it might be a faster adaption, if you write a lot.
