I've tried using firefox's built in dark theme but it doesn't quite do enough. I'm looking for a dark reader that'll invert most websites' white background and dark text. I was wondering what privacy friendly dark readers people here would recommend, as some that I've seen have reports of harvesting user data and sending to third party servers. If not an extension, what would be the best way of achieving my desired effect?

I personally use DarkReader, ~~it's not foss afaik but works well and is decent about userdata from what I've seen. There are likely better options out there tho that I just haven't found~~

Turns out it actually is FOSS and it's pretty good!

You can just download the xpi file from addon store (by right-clicking the install button), rename the extension from .xpi to .zip and unzip it to view those source codes.

"Dark Background and Light Text" is much faster than Dark Reader.

Faster in what sense? Doesnt seem to me as if dark reader makes things any slower.

I use dark reader on desktop and dark background white text on mobile for that very reason. But there are many websites I encounter for which I have to disable the dark background addon because it turns too many buttons and other important website features black making them impossible to see.
