I could probably do a screen share at some point if that would help.
I log in, go to "Create Community"
Name and display name are both "exJW"
No icon or banner
Description is a one sentence thing that I change every time I try to create it
Moderator checkbox is unchecked
Languages are English and Undetermined

Hey, sorry for the slow response, I've been getting a lot of messages and working through them steadily.
I suspect this is your issue - the actual name of a community must be lowercase. In my browser, it does tell me that the name is in a wrong format when I enter "exJW", but it's not super clear what the correct format is. I believe this error error message will need to be improved.
Anyway, I have created the community myself: https://lemm.ee/c/exjw. Please make a post in here and tag my name, I can then pass ownership of the community to you. At that point, you'll be able to set it up however you like!
Try on FF for Windows or Linux, on some instances I have had big problems with FF for android not accepting credentials
Other people have mentioned that using other browsers on android has worked for them, but I personally prefer to stick with what I trust
