I have a Triban RC100 and am looking to convert it to 11 speed. Seeing as I had a budget, I found Sensah Srx Pro and Shimano Rs100 wheels. That was when I got stuck.

I am looking to have some lower gears that would work offroad so what cassette would be compatible?

Seems like it's designed for shimano so it looks like you'll be fine with an 11 speed hyperglide road cassette with a spacer. Assuming you're planning for a single ring up front. I agree it seems to go up to 52 teeth in the lowest gear.

Do you think the levers would work with my rim brakes? I heard it could make the brakes dangerous if the levers are not correct.

I can see someone with a Triban on Ali Xpress with rim brakes so you're probably fine. You need specific levers for v brakes but you probably have road rim brakes yeah?

Triban RC100 has these no name Dual Pivot (if got the terminology right).

I might have found an easier and cheaper option. On this reddit post: https://www.reddit.com/r/bicycling/comments/1266tr6/triban_rc100_sora_drivetrain_upgrade/?tl=fr They install a a Shimano Sora groupe with a 9 speed cassette on the stock rims, so I wondered if a Advent 1x9 or 1x10 would work.
