Given how prevalent it is, it can be hard to avoid. I'm not into it but sometimes I'm like "OK, I'm tired of trying to find something that fits my description and isn't incest/incest-adjacent. I'll just try to ignore that aspect."

I never specifically look for it but so much comes up with seemingly any search.

Do you then, as a parent and step-parent, instruct your children and step-children to refer to each other in more closely related familial ways?

I do not, but I'm not sure that's relevant. You're just trying to come up with a correlation based on essentially nothing. You only know this one thing about them.

It is because the context for their original joke was my Dad trying to make us use more familial terms, so they're bouncing that joke back onto you. Was quite funny if you ask me
