Yeah good idea, but probably only worth for people with quite some money to spare. So the next best option is probably an old laptop where you can just detach the wifi card?
Probably. Or if you are comfortable with hardware mods, you could strip the undesired components out of an old mobile device and seal it back up.
Using a Faraday bag is also an option, but themn it's more of an all-or-nothing proposal for functionality when powered on.

Suggestion: The four step transaction signing process could benefit from some color coding for each of the steps, perhaps even an overview diagram of the entire process and where we are in the process.
