My boys are a bit older. They play Minecraft on a PS4. They create a world and then just play together. I don't think it is offline but Friends Only. So the game stays private. I think this is a great way of enjoying Minecraft. Like yours they talk constantly about what they have built, what they are going to do next etc. I limit their playtime to 1 hour max per day. They can choose what to play. Other great games on PS4 are Lego World, Lego Star Wars, Rachet and Clank and Little Big Planet. All are local coop except Rachet which they play by taking turns.

I terms of installation they are actually a PC. Just load your favorite distro on a USB stick and install it as you would on a Desktop. For me Ubuntu is working great on an older Surface Go, including touch. The keyboard cover is highly recommended of course.
Being able to form armies that move as one is already a great improvement that could reduce a lot of managing late game. Same with reinforcements which will find their way to the front alone in Civ VII.

There's a pretty good game as well on Steam called Nucleares. Very challenging but cool to be able to walk around the plant .

You could try using the e-ink buddy from Adafruit. I bought one for driving a price tag e-ink as well but have not tested it yet unfortunately. On their site they say that e-ink connectors are pretty standardized.
