100 years is a lot of dead skin, fluids, bed sores, etc. She'd be the host of all sorts of thriving ecosystems and have potato levels of muscle atrophy. The proximal stench would be rancid. Once finally awake, she would have all the values of a society a century ago. A 2023 Sleeping Beauty could well be an antisemitic opiate addict who protests the heliocentric model. So he's basically taking a gamble on trailer trash.

I would assume that the magic preserved her body, but honestly I don't see why the witch would protect her since Snow White would still be fairest in all the land.
