Android is only better if you're using a open-source distribution (ideally a security-focused one) and stick to open-source software, otherwise it's still proprietary spyware

If you have anything Google related on your phone, the feds can see that. Google literally trained their AI on people's Google Docs and shit

Obsidian if you need cloud sync and pdfs libre office otherwise

Locally saved Microsoft Word files is about as bog standard for the average consumer as you can get. Just don’t connect the service to outlook for “Cloud transfer”. That’s how Google sees your Google docs too.
