I really enjoy doing martial arts as a way to stay fit. I find I get really bored going to the gym, but with martial arts there's a lot of stuff to keep your mind busy and the exercise becomes mostly incidental.
I think just starting with a walk around your neighborhood would do wonders for you. Whenever I haven't exercised in hot minute, I go for a 30 minute walk and I realize how better I feel after. An easier bar of entry in terms of capacity, and also mentally as well.

I got a dog. I take dog for 2 hour walks each evening and practice walking meditation. It's done wonders for my mental health

I think it's generally healthy, they do that as a form of therapy in homes. Even just taking care of a plant improved people's moods.

Do you enjoy making things with your hands or fixing things? I find fixing old tools, toys, appliances is rewarding and allows me to be engaged while also reducing my impact. Building your own tools or furniture from things you own or can acquire easily is a great way to tinker without too much investment.
If you have some green areas near you try climbing trees. It's a pretty weird hobby and you can start with what feels like humiliating small steps (climbing a hip-height branch). But it's a great way for getting a different and closer appreciation for nature and also of exercising balance and body control rather than just the muscle growth you'd get at the gym.
I also second martial arts, specially more cultural ones like Capoeira, Kung Fu or Karate rather than competition-focused ones like Boxing.
