I feel like there should be honorable mentions for garlic, which is neither a spice nor an herb, and MSG which is just a chemical.
Those are my best cooking friends.
another honorable mention to the maillard reaction, browning/searing food does a ton of heavy lifting
I've been trying to find MSG, can't find it at any of the grocery stores near me. Not sure what I'm doing wrong, it should be with spices and salt right?

Damn thanks, I think I saw that and just didn't know.
There's persistent racist myths about MSG and so they have to hide what they're selling.
But, yeah, Accent is generally the brand I've seen available. Comes in huge canisters!
