Just made some really tasty soup and risotto.
Sounds lovely what kind of soup n risotto? Im going to make some risotto with oyster mushrooms i found at the store today :3
Broccoli Rabe and Bean soup! I got an amazing cheap cookbook on sale two weeks ago that soups for every month of the year, and this was one of the ones for November. It is really warming and delicious. I also made an incredible vegetarian ossobuco soup last week. Let me know and I can share the recipe.
And just a basic portobello mushroom risotto. It goes well with the soup and keeps really well.
That sounds mighty tasty! How does broccoli rabe taste compared to broccoli? I dont usually do well with bitter
Mushroom risotto is classic :3 i love using different types, i think trumpet mushrooms are my fav to top a risotto with cause you can really sear them nice and good
It is bitter, but it really gels well with the other ingredients to make such a comforting soup.
I have briefly explored mixing mushrooms(including trumpets!) in my risotto, and used foraged chanterelles one time. I am going to explore this further. Thank you, comrade!
Also a quick trick I learned to make a creamier risotto. If you soak the starch from the rice, and use that same water(I use broth) to cook the risotto, it ends up creamier. Also, if you preheat the broth to a simmer before pouring it into the rice, it will cook so much faster and more efficiently.
Ooh chanterelles! I really need to get into mushroom foraging. I would love to get my hands on chicken of the woods or beefsteak shrooms (we dont have mushroom emojis which is a disgrace)
