It's literally soft vs harsh lighting and PS2 vs PS5 graphics. The new character model literally has the exact same bone structure as the old one. It's just that the harsher lighting on the PS5 makes her features look stronger, and reveals extra detail that the PS5 can render.
Do gamers even know how lighting works in photography and film?
The only thing I'd be critical of here is the removal of the yellow colour filter for a blue one, yes it's a stylistic choice and the yellow filter does date the original game to the mid 2000s, and the developers want to avoid their remake looking dated, but it was a big part of how the original game looked.
