Whenever I heard about apple pie with cheese, my brain always pictured cream cheese or ricotta/mascarpone or whatever. People are really out here melting cheddar over their apple pies?! jesse-wtf

yes, the sharper the better, or so I'm told

I didn't care for it the one time I tried it, seemed like a waste of two things that would be better separate

IMO it's much better if you don't melt the cheese. A slice of very sharp cheddar beside your pie of good as hell though.
