If you want a fast lighting flame to cook something that won't benefit from the smoke flavor, propane is perfect. One summer I had a shitload of ground beef leftover from a herd reduction and propane was the go-to for quick start, fast cooked burger patties.

Oh man, wok cooking is almost exclusively the realm of propane. Can a wood fire get hot enough for wok hei?
