How much work is making a Minecraft server from scratch? What things need to be implemented? I saw on the GitHub that placing and destroying blocks was implemented, so I’m guessing it’s a lot of work

I like playing Tetris. You could either play 1v1 or battle royale style. It’s pretty frustrating at first but when you get a little good it’s basically second nature
Best ones I know are Jstris or Tetr.io. Jstris is more minimal and good if you don’t like flashy graphics and Tetr.io is basically the opposite of that.
Depends on how simple you mean. I’ve made countless games that are super simple and took just a couple of hours. I advise that OP makes one of these games and not a “real” game since I honestly don’t think ChatGPT can make a big game without a programmer that knows what they’re doing

Session is pretty slow in my experience, since it — as I understand it — works in a similar way to Tor. Images and videos are especially bad
