I've never used matrix before, what homeserver should I use? I feel like I heard about a lemmygrad one but I don't remember the details or if that was a server I could make accounts on.
Don't use matrix.org it's slow and overcrowded. The question is if you want stability or leftist administration because there's a higher risk of drama or collapse with some of the leftist servers as opposed to stuff like KDE or other projects. I'm not sure who chapo federates with though.

You can use https://envs.net it's fast. Just leave the defaults chats and don't engage with them. I use it myself.
Just setup your own. Surely everyone has the technical knowhow and server to do that 
I could, but I'd probably have to take a whole bunch of opsec steps and... meh. Plus hosting stuff myself usually comes with more risk in general.
